Hi there! Thanks for reaching out to us.
Unfortunately, it is not possible to edit the info text shown while installing the MDM enrollment profile since it is displayed by Apple.
Could you please provide more context so as to why you want to achieve this?

If that’s the case, you can disable or hide the Profiles pane from System Preferences so that the users won’t be able to view the profile details once the enrollment profile is installed.
Check out the script to hide Profiles pane from System Preferences on macOS devices.
