I would like to be able to set Windows Update settings via a device policy (e.g. to set active hours, if to download and install updates or just check etc.) via device policy

Hope you are doing well,
The option to have the OS update settings for your Windows devices configured is a feature that is currently on our roadmap. We shall have you appended to the feature request pool and keep you in the loop with updates regarding this.
In the meantime, if you are able to develop a script to have the OS update configurations configured, you would be able to have this distributed to the devices using the custom script functionality that we offer. You would be able to do this from Manage > click on the device name > Actions > Execute Custom script.
