Any tips on how to hide an admin account on employee macs? We have around 500 MacBook Airs deployed, and manually doing it will be a hassle. Should preferably be able to hide it from both System Preferences and login window…

You can hide the account from the GUI and users and groups in system preferences. You can still log in as an admin even though it’s hidden from the login window.

Will this work for FileVault enabled accounts?

FileVault cannot be enabled for a hidden user. Following a reboot, any user with FileVault- enabled will appear and not be hidden on the FileVault login screen. There is no way to hide the user from the FileVault login window.

I understand this is a long-requested feature but not on a priority list of Apple. It should be a username and password field instead of a list of users. Simple yet effective!

It is a security flaw that reduces the integrity of FileVault if you think about it. It is significantly harder to execute a brute force attack when you need to crack both username and password. This flow is just inviting social engineering exploits through the door.
