I have a question regarding preventing users to update their OS version (iOS)
Is it part of the advanced restrictions?

Hey, Thanks for reaching out to us.

You will not be able to completely block the OS updates on iOS devices. However, you will be able to force delay the updates to a specified number of days.

To force delay the updates:

  1. Navigate to Policies-> iOS-> Security-> OS Updates and click Configure.
  2. Enable the option ‘Force delayed software update’. The option to set the number of days until which the software update on a device can be delayed will appear.
    The update can be delayed up to a maximum of 90 days. The default delay is 30 days.

Please note that the feature is supported only on Supervised iOS devices running iOS 11.3+.

What happens when the number of days up to which the update is delayed has expired? Will the update happen?

Hey, Thanks for reaching out to us.

The user will not be able to see the updates until the number of days up to which the delay has been configured ends. When this specified number of days ends, the users will receive a prompt to download and install the latest version of the update available.
